Why are there so many "quiet" movie stars?

I am talking about famous people with a good history -- Dustin Hoffman, Jack Nicholson, Harrison Ford, Andy Garcia, Goldie Hawn, Michelle Pfeiffer, Halle Berry, and even younger stars such as Dakota Fanning, Ashley Judd, Alicia Silverstone, Reese Witherspoon, and so on. Why is it we never see even one movie per year with stars like these?
